I love pizza.  I have been in the pizza business over 37 years professionally and still love it .  I believe pizza should be fun, achievable, and most of all, delicious.

​Woodfired ovens have become very popular now. When I built mine, it was an exploration of how to use it and how to cook in it. I burned a lot of pizza. It was a lot of practice and learning to get things right. Then, to host a fun pizza party without me being stressed and it being a lot of work (or having the oven go cold or get too hot!).

Now that years have passed and I have years of practice in the oven, I want to teach my knowledge to you. No more guessing, and a lot less burnt pizza!

I wish there was a class like this back then, I could have used it. Less stress and food issues and more eating and more fun with my guests.

The beauty of having this class in your oven, is it offers you the chance to learn your oven's habits and unlock your potential oven skills.

Portable ovens have made backyard pizza achievable to all.  But, are they really as easy as they make it out to be?  Cooking... maybe, but everything before the oven is not well taught. Frankie G will take care of that for you.

We will give you a complete understanding of dough characteristics to improve your crust's performance and target towards how you personally like your pie.

We will help you master these table-top ovens to provide your family and guests with delicious pizza and appetizers. Along with a great understanding of how to operate and what NOT to do.

You'll learn the tricks to shape your pizza dough to promote the perfect cornicione(round end crust of the pizza) - how to perfect the balance of toppings to promote the best flavor - what toppings to use before cook or after - get the most flavor out of your ingredients.

HOME Oven Ciabatta Classes

One of the most popular and admired Italian breads.  The word ciabatta literally translates to the word "slipper",  which the bread gets from its flat, long shape. Beloved by most, it has a very open crumb structure and complimentary crust. Perfect for sandwiches and a strong supporter of fresh olive oil.

Ciabatta is made with a very wet, high-hydrated dough.  It can be tricky and sometimes frustrating to work with, unless you. know the tricks.  In our ciabatta class, we teach the basics of ciabatta preparation and provide 2 other options of what can be made with the same dough.

You'll learn to formulate, shape, and bake ciabatta. We will design the class and flavors for your tastes and skill level, making sure that you have fun, and learn all that you want. Best of all, Frankie G will coach you with a hands on method that you will be able to recreate after the class.

Sicilian sfincione was the first pizza I was ever taught to make. My grandmother Agatha, used to make it every holiday, and we still make it today... it's a favorite and a must for our family gatherings. Sfincione, is a thick and light, pan-baked pizza. It is topped with a tomato and green onion sauce, and topped with hard cheeses and breadcrumbs. This pizza is a must for those interested in focaccia.

In our focaccia class, we teach the basics of focaccia preparation and how to create different flavors that appeal to you. The result will be a light and soft inside, with lots of textures and flavors on the bottom and top.

You'll learn to formulate, make, and shape focaccia dough. We will design the class and flavors for your tastes and skill level, making sure that you have fun, and learn all that you want.
